Ingredients:
**For the Ribs:**
- 2 racks of pork baby back ribs (about 4-5 pounds)
- 1 tablespoon olive oil
For the Dry Rub:

- 1 teaspoon onion powder
- 1 teaspoon ground cumin

For the Sweet and Spicy BBQ Sauce:
- 1 cup ketchup
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tablespoons honey
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon hot sauce (adjust to taste)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper (optional)
Instructions:
1. Prepare the Ribs:
- Start by removing the membrane from the back of the ribs. Use a knife to gently lift the edge of the membrane, then use a paper towel to grip and peel it off.
- Rub the ribs with olive oil to help the seasoning stick.
2. Make the Dry Rub:
- In a small bowl, combine all the dry rub ingredients: brown sugar, paprika, chili powder, garlic powder, onion powder, cumin, smoked paprika, black pepper, salt, cayenne pepper, and ground mustard.
- Generously coat both sides of the ribs with the dry rub, massaging it into the meat. For best results, cover the ribs and let them marinate in the refrigerator for at least 2 hours, or overnight.
3. Prepare the BBQ Sauce:
- While the ribs are marinating, make the BBQ sauce. In a medium saucepan, combine all the sauce ingredients: ketchup, apple cider vinegar, brown sugar, honey, Worcestershire sauce, soy sauce, Dijon mustard, hot sauce, smoked paprika, garlic powder, onion powder, chili powder, and cayenne pepper.
- Stir the mixture over medium heat until it starts to simmer. Reduce the heat to low and let the sauce cook for 15-20 minutes, stirring occasionally. Once thickened, remove from heat and let it cool.
4. Cook the Ribs:
- Preheat your oven to 275°F (135°C). Place the ribs on a large baking sheet lined with aluminum foil. Cover the ribs with another layer of foil, sealing the edges to create a packet.
- Bake the ribs in the preheated oven for 2.5 to 3 hours, or until the meat is tender and easily pulls away from the bones.
5. Grill and Glaze the Ribs:
- Preheat your grill to medium-high heat. Carefully remove the ribs from the oven and let them cool slightly before handling.
- Place the ribs on the grill and brush them generously with the prepared BBQ sauce. Grill the ribs for 5-10 minutes on each side, basting with more sauce, until they develop a caramelized, slightly charred crust.
6. Serve:
- Once the ribs are nicely glazed and have a sticky, sweet, and spicy crust, remove them from the grill.
- Let the ribs rest for a few minutes before cutting them into individual portions. Serve with additional BBQ sauce on the side.
